He also avoids truffle oil, calling it a "flavor enhancer" rather than a true truffle product; liquid nitrogen in cooking, due to safety concerns; and any dish with an excessive number of ingredients, as he values simplicity in cooking. Lastly, he avoids cooking with cheap, low-quality ingredients, emphasizing the importance of using fresh, high-quality produce in his dishes.
