A new food truck named "Latin Cuisine" is set to open in downtown Springfield, offering a variety of Latin American dishes such as tacos, empanadas, and arepas, aiming to bring authentic flavors to the local community. The truck, owned by Maria Hernandez, a native of Colombia, will start operating next week and plans to participate in local events and festivals to increase its visibility. Hernandez expressed her excitement about sharing her culture through food and hopes to eventually expand to a brick-and-mortar location if the food truck proves successful.
